The minestrone diet was developed as a diet that allowed losing weight for obese patients who needed to undergo surgery for heart disease.

Minestrone is low in calories with lots of broth, cabbage, and other vegetables with which the soup is made, providing a lot of fiber; these vegetables, together with the liquids, reduce the feeling of hunger.

If the minestrone is added to another well-balanced diet, its function is to reduce the portions of food consumed daily due to the feeling of fullness that the soup causes.

And finally, it is considered convenient to weigh yourself each morning from the fourth day.

If the weight loss is more significant than three kilos per day, it is necessary to modify the scheme.

This is usually done by introducing wholemeal bread at breakfast or brown rice at lunch (approximately 120 to 140 grams of cooked weight) since the drastic weight drops are harmful.

Ingredients:

  • One tomato is peeled and cut into pieces.
  • Two carrots were peeled and cut into small wheels.
  • One leek cut into pieces
  • 200 g of fine green beans, chopped in half.
  • 400 g of cannellini frijoles.
  • 4 or 5 peeled and chopped turnips.
  • Two chopped green peppers.
  • Three stalks of celery are cut into small pieces.
  • 1 medium onion, chopped
  • One large zucchini is cut into cubes.
  • 1/2 cabbage cut finely.
  • 2 tbsp extra virgin olive oil
  • Two garlic cloves are finely chopped.
  • 2 bay leaves.
  • One tablespoon of chopped rosemary (fresh).
  • 3 tbsp chopped basil (new).
  • Herbs, salt, and pepper to taste.
  • Grated Parmesan cheese.

All the ingredients are placed in a pot with salt and covered with water, allowing them to boil for 10 minutes. The flame is lowered, and let it cook slowly for half an hour.

  • Dinner:  minestrone, peppers, eggplant, and roasted pumpkin.
Fourth day:
  • Breakfast:  Coffee with 200 ml of skim milk and camber.
  • Mid-morning: Lunch: tea or coffee.
  • Lunch: 200 g of low-fat yogurt and a banana.
  • Snack:  Tea
  • Dinner:  Soup minestrone and a shake with 200 ml of skim milk and a camber.
Fifth day:
  • Breakfast: Coffee.
  • Mid-morning: Tea.
  • Lunch: 300 grams of grilled or grilled fish and fresh tomatoes.
