The Minestrone diet is a soup that proposes a rapid loss of weight, which lasts a maximum of one week.


Diets that are based on soup consumption range from a balanced and controlled diet in the number of calories that includes a variety of foods, to a simple minestrone-style soup.

Administered in any regimen, which is controlled in calories and its function is to maintain the feeling of fullness for longer, helping to control the total consumption of calories consumed daily.

The soup has a high water content, which helps the feeling of fullness. They are made with various vegetables that provide fiber and little caloric content.

The traditional minestrone soup regimen is based on high calorie restriction of approximately 800 to 1,000 calories per day.

Its maximum duration is one week, once this time has passed, it goes to the maintenance phase, whose rations will be determined by a specialist.

Action mechanisms

The minestrone diet has its mechanism of action in the fact that it foresees a total suppression of fats and starches.

This forces the organism to take energy from reserves. Therefore, this regime favors not only the loss of weight, but the loss of fat.

This decrease in body fat is based on the type of food with which the soup is prepared, not in the amount consumed, since with this diet you can consume the minestrone soup several times a day, without any restrictions.

The first two or three days of the diet are more difficult and the most important. During these days only fruits and vegetables are consumed, thanks to this the body is purified and toxins are eliminated.

When performing this regimen there are almost always some discomforts such as heavy bowel movements, frequent urination, so it is recommended to start it on weekends.

There may also be abdominal pain and gas, this can be remedied with the consumption of yogurt.


The minestrone diet can be done in two ways:

One with the single consumption of soup for one week as a hypocaloric diet, high in fibers and with a high water content and another as a companion to other diets.


The minestrone diet was developed as a diet that allowed losing weight to obese patients who needed to undergo surgery for heart disease.

Minestrone soups are low in calories with lots of broth, cabbage and other vegetables with which the soup is made, provide a lot of fiber, these vegetables together with the liquids, reduce the feeling of hunger.

If the minestrone soup is added to another well-balanced diet, its function is to reduce the portions of food consumed daily, due to the feeling of fullness that the soup causes.


It is a diet with low calorie content, causes rapid weight loss, can be combined with other types of diets and improve results or may be the start to a regular low-calorie diet.


The minestrone diet, when made exclusively based on this soup, should be done only for a short period, never exceed a week, because it is of very low caloric content and can produce side effects.

This diet must be authorized by the doctor, because it is a very severe regime.

In the period between the fifth and the seventh day it is important to consume at least 1 1/2 liters of water, because in this lapse in which there is a high consumption of fats and proteins.

This diet should not be followed by children, pregnant women or older adults because of their low caloric intake.

And finally, it is considered convenient to weigh yourself each morning from the fourth day.

In case the weight loss is greater than three kilos per day, it is necessary to modify the scheme.

Which is usually done by introducing wholemeal bread at breakfast or brown rice at lunch (approximately 120 to 140 grams of cooked weight) since the drastic weight drops are harmful.



  • 1 tomato peeled and cut into pieces.
  • 2 carrots peeled and cut into small wheels.
  • 1 leek cut into pieces
  • 200 g of fine green beans, chopped in half.
  • 400 g of cannellini frijoles.
  • 4 or 5 peeled and chopped turnips.
  • 2 chopped green peppers.
  • 3 stalks of celery cut into small pieces.
  • 1 medium onion, chopped
  • 1 large zucchini cut into cubes.
  • 1/2 cabbage cut finely.
  • 2 tbsp extra virgin olive oil
  • 2 garlic cloves finely chopped.
  • 2 bay leaves.
  • 1 tablespoon of chopped rosemary (fresh).
  • 3 tbsp chopped basil (fresh).
  • Herbs, salt and pepper to taste.
  • Grated Parmesan cheese.


All the ingredients are placed in a pot with salt and covered with water, allowing them to boil for 10 minutes. The flame is lowered and let it cook slowly for half an hour.

The species are added and the salt is rectified.


First day:
  • Breakfast:  Coffee or tea, an apple and a pear.

  • Dinner: Minestrone soup, 200 grs of roasted potatoes and 10 g of butter.
Third day:
  • Breakfast:  Tea or coffee, pear and pineapple.
  • Mid-morning:  Unsweetened fruit juice.
  • Lunch:  minestrone soup, artichokes and steamed carrots.
  • Snack:  Unsweetened fruit juice.
  • Dinner:  minestrone soup, peppers, eggplant and roasted pumpkin.
Fourth day:
  • Breakfast:  Coffee with 200 ml of skim milk and cambur.
  • Mid morning: Lunch: tea or coffee.
  • Lunch: 200 g of low-fat yogurt and a banana.
  • Snack:  Tea
  • Dinner:  Soup minestrone and a shake with 200 ml of skim milk and a cambur.
Fifth day:
  • Breakfast: Coffee.
  • Mid morning: Tea.
  • Lunch: 300 grs of grilled or grilled fish and fresh tomatoes.
  • Snack: Tea
  • Dinner: Minestrone soup and 200 grs of grilled fish.
Sixth day:
  • Breakfast: Coffee.
  • Mid morning: Tea.
  • Lunch: 1 or 2 grilled beefsteak; Steamed pumpkin.

  • Dinner: Minestrone soup and 400 grs of roasted chicken without skin.
Seventh day:

  • Dinner: minestrone soup, salad of lettuce and cucumber.
